Fritters

Classic Corn fritters

Make up a basic fritter mixture and add flavours.

Mixture – 1 cup self raising flour, pinch salt, freshly ground pepper, 2 eggs and ½ cup soda water.

Add one tin kernel corn, 100g cubed feta cheese and mint

Or

Grated courgette (squeezed out in a tea-towel), 1 tbsp pesto and ½ cup grated fresh parmesan.

Leave the mixture to stand for about 10 minutes before cooking spoonfuls in hot oil.
